Plant-Based / Vegan Snack Spread

This plant-based, vegan-friendly snack spread is easy to make and so delicious, that even omnivores will love it. It features plant-based / vegan tzatziki sauce, mini manakeesh, and mini za’atar-sprinkled pizzas. These snacks are great for game day, movie night, and many other occasions.

Manakeesh:

Although we plan to post a homemade flatbread recipe at some point, we went the easy route with this spread and used miniature naan rounds, which you can find at most grocery stores. Here is a list of ingredients we used:

2 ½ tbsp. Journey Spice Co. Organic Za’atar

6 miniature naan rounds

2 ½ tbsp. extra virgin olive oil

½ cup cashew milk mozzarella, sliced in small cubes (there are a few good store-bought brands out there).

2 tbsp. plant-based mozzarella shreds (there are a few good store-bought brands that make dairy-free mozzarella shreds as well).

Directions:

  1. Preheat your oven to 400°F.
  2. Lightly spray a large cooking pan with cooking spray.
  3. In a small bowl, mix together the Journey Spice Co. Organic Za’atar and extra virgin olive oil.
  4. Spread this mixture evenly on all naan rounds.
  5. Evenly sprinkle the naan rounds with the two types of plant-based mozzarella.
  6. Place the rounds on the cooking pan and set aside.

Za’atar-Sprinkled Pizzas:

Here is a list of ingredients we used:

1 ½ tbsp. Journey Spice Co. Organic Za’atar

6 miniature naan rounds

1 cup plant-based mozzarella shreds

½ cup marinara sauce

½ cup spinach leaves

½ cup sliced cherry tomatoes

Directions:

  1. Place the six rounds on the same pan as the manakeesh.
  2. Evenly spread the marinara sauce on each of the six rounds.
  3. Evenly disperse the spinach, tomatoes, and cheese on each of the six rounds and evenly sprinkle each of the six rounds with the Journey Spice Co. Organic Za’atar.
  4. Bake the manakeesh and pizzas in the oven for 10 minutes, let cool, and enjoy!
