Zucchini Lasagna

This Zucchini Lasagna is an excellent alternative to traditional lasagna with pasta noodles if you want something a little different, want to add more veggies to your diet, or are trying to cut some carbs.

Ingredients:

2 Tbsp. Journey Spice Co. Organic Pizza Seasoning

1 1/2 Tbsp. Journey Spice Co. Organic Tuscan Seasoning

6 large zucchini (you may need more if you can only find small zucchini)

1 lb. ground beef or plant-based alternative

2 cups marinara sauce

15 oz. ricotta cheese or plant-based alternative

8 oz. + 1/2 cup shredded mozzarella cheese or plant-based alternative

2 large eggs or 6 Tbsp. of store-bought plant-based egg alternative

Olive oil cooking spray

Directions:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Slice both ends off of each zucchini and slice the zucchini lengthwise, getting about six slices from each zucchini.
  3. Place the zucchini in oven pans, spray them with olive oil spray, sprinkle with 1/2 Tbsp. of Journey Spice Co. Organic Pizza Seasoning, and bake the slices for 10 minutes. Take them out of the oven and set aside when done. This step is done to get excess moisture out of the zucchini.
  4. Spray a medium-sized pan with olive oil spray and place it on your stove over medium heat. Add the meat to the pan and cook for about 5 minutes, breaking up larger pieces. Drain the meat if necessary. Add 1 cup of marinara sauce and the Journey Spice Co. Organic Tuscan Seasoning and cook for another minute, ensuring the seasoning and sauce are evenly mixed in the meat. Set aside.
  5. In a medium-sized bowl, use a fork to mix ricotta cheese, eggs, and 1 Tbsp. Journey Spice Co. Organic Pizza Seasoning.
  6. Spread 3 Tbsp. of marinara sauce on the bottom of a 9 x 13 (or similar size) inch baking dish.
  7. Add a layer of the zucchini slices, a third of the ricotta mixture, a third of the meat mixture, and a third of the mozzarella.
  8. Repeat step 7 two times.
  9. Add a final layer of zucchini, spread the remaining marinara sauce, and sprinkle with the remaining mozzarella cheese and remaining Journey Spice Co. Organic Pizza Seasoning.
  10. Bake for 30 minutes, let cool, and enjoy.
