Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

2 Tbsp. Journey Spice Co. Organic Za’atar

2 medium zucchinis, cut into “fries”

1 cup panko breadcrumbs

½ Tbsp. garlic powder

½ Tbsp. black pepper

¼ cup flour (any kind will work)

½ cup milk (regular or plant-based)

Optional: A pinch of salt

Cooking spray

Directions:

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper or aluminum foil and lightly spray it with cooking spray.
  2. Mix Journey Spice Co. Organic Za’atar, panko, garlic powder, and black pepper in a small bowl and set aside.
  3. Pour the flour into its own small bowl. Pour the milk into another small bowl.
  4. Cut the ends of the zucchinis off and discard. Cut the remaining zucchini into “steak fry”/ larger French fry-sized pieces.
  5. Gently roll a zucchini piece in the flour until lightly coated.
  6. Dip the coated zucchini piece in the milk/plant milk.
  7. Roll the zucchini piece in the panko mixture until it is well-coated.
  8. Place the zucchini piece on the baking sheet.
  9. Repeat with each zucchini piece, leaving a small amount of space between each piece.
  10. Bake in the preheated oven for 20 minutes.
  11. Let cool for a few minutes and enjoy with your favorite dip!
