Tuscan White Bean Soup
This Tuscan White Bean Soup is delicious and comforting while also being healthy. We used great northern beans for this recipe, but you can also use cannellini beans. Everyone will enjoy it; it can easily be made vegan-friendly if you follow a plant-based diet.

Ingredients:
2 Tbsp. Journey Spice Co. Organic Tuscan Seasoning
1 ½ Tbsp. Journey Spice Co. Organic Savory Garlic Herb
6 cups vegetable broth (use low sodium vegetable broth if concerned about sodium)
3 15 oz. cans of white beans, drained and rinsed
2 celery stalks, chopped
2 cups carrots, chopped
2 cups baby spinach, tightly packed
1 red onion, chopped
1 cup milk, dairy or plant-based
5 garlic cloves, minced
1 ½ cups cherry tomatoes, halved
Juice of 1 lemon
1 Tbsp. extra virgin olive oil
Directions:
- Add the extra virgin olive oil to a large pot and sauté the chopped onion, celery, carrots, cherry tomatoes, and minced garlic cloves for 10 minutes.
- Add the vegetable broth to the pot and simmer over medium heat for 25 minutes.
- Add the beans, milk, spinach, lemon juice, Journey Spice Co. Organic Tuscan Seasoning, and Journey Spice Co. Organic Savory Garlic Herb and simmer over medium heat for another 15 minutes.
- Serve immediately and enjoy leftovers within four days.
