
Stuffed Portobellos & Bell Peppers
This Stuffed Portobellos & Bell Peppers recipe makes a deliciously hearty meal and uses our ever-popular Organic Tuscan Seasoning. Although this recipe calls for portobello mushrooms and bell peppers, the sausage stuffing would also work well in other “stuffable” large vegetables, such as squashes and eggplant. However, remember to adjust baking times according to the vegetables you use.

Cook/Bake Time: 30-60 minutes
Ingredients:
2 1/2 Tbsp. Journey Spice Co. Organic Tuscan Seasoning
1 lb chicken, pork, beef, or plant-based sausage
8 large portobello mushrooms (or a mixture of portobello mushrooms and bell peppers, or other large “stuffable” vegetables like squash – adjust baking times accordingly)
1 red bell pepper, diced
1 red onion, diced
1 cup cherry tomatoes, sliced in half
1 cup shredded mozzarella cheese or other plant-based cheese
½ Tbsp. extra virgin olive oil
Directions:
- Preheat your oven to 400 degrees.
- Wash the portobello mushrooms and/or bell peppers/other vegetables. Remove the stems and gills of the mushrooms and seeds from the bell peppers (or other vegetables) if you are using them. Place them on an oven-safe cooking sheet and spraying it lightly with cooking spray.
- Put the extra virgin olive oil in a medium-sized pan over medium heat.
- Cook the red bell peppers, red onion, and sausage in the pan for 10 minutes. Make sure that you break up the sausage well into smaller chunks during the cooking process. If there is a casing on the sausage, remove it beforehand.
- Add the Journey Spice Co. Organic Tuscan Seasoning and stir well.
- Evenly distribute the mixture in the portobello mushrooms and/or other vegetables. Sprinkle evenly with cheese.
- Bake in your oven for 20-30 minutes. Some vegetables like squash may require 45-50 minutes.
