Shrimp and Scallop Sheet Pan Dinner

This Shrimp and Scallop Sheet Pan Dinner is so easy to throw together, and it is especially great after a long day when you do not feel like putting much effort into cooking.

Prep Time: 20-25 minutes

Cook/Bake Time: 30-35 minutes

Ingredients:

1 Tbsp. Journey Spice Co. Organic Za’atar

1 Tbsp. Journey Spice Co. Organic Greek Citrus Rub

1 Tbsp. Journey Spice Co. Organic Mediterranean Herb Blend

2 cups sweet potatoes, peeled and cut into cubes

2 cups Brussels sprouts, sliced in half

1 cup peeled, uncooked shrimp

1 cup scallops

3 Tbsp. extra virgin olive oil

Optional: a few pinches of salt. Minced garlic cloves. Crushed red pepper if you like it spicy.

Directions:

  1. Preheat your oven to 400 degrees
  2. Mix the sweet potatoes, Journey Spice Co. Organic Za’atar, and extra virgin olive oil in a medium-sized bowl and then spread it evenly on one side of a sheet pan. Rinse the bowl out.
  3. Mix the Brussels sprouts, Journey Spice Co. Organic Mediterranean Herb Blend, and extra virgin olive oil in the medium-sized bowl and then spread it evenly in the center of the sheet pan. Rinse the bowl out.
  4. Bake in the oven for 15 minutes.
  5. Mix the shrimp, scallops, Journey Spice Co. Organic Greek Citrus Rub, and extra virgin olive oil in the medium-sized bowl.
  6. Take the sheet pan out of the oven and place the shrimp and scallops on the remaining space of the pan.
  7. Bake for about another 15-20 minutes. You can tell if the shrimp is fully cooked when it curls in a c-shape and turns pinkish or orange (depending on variety). If the shrimp is fully cooked, the scallops should also be fully cooked.
