Sausage Stuffed Portobello Mushrooms

These Sausage Stuffed Portobello Mushrooms make a deliciously hearty meal and are excellent to pair with dinner salads and soups. This recipe is easy to pull together in about 35 minutes. These Sausage Stuffed Portobello Mushrooms are a perfect option if you are following a low carb diet or keto diet, as portobello mushrooms are low in carbs. Are you following a vegan diet, plant-based diet, or vegetarian diet? You can easily use plant-based sausage and dairy-free cheese instead of regular pork or chicken sausage and dairy-based mozzarella cheese. Ingredients:

1 ½ Tbsp. Journey Spice Co. Organic Tuscan Seasoning

1 lb chicken, pork, beef, or plant-based sausage

6 large portobello mushrooms

1 red bell pepper

1 red onion

1 cup cherry tomatoes

½ cup shredded mozzarella cheese or other plant-based cheese

½ Tbsp. extra virgin olive oil

Directions:

  1. Preheat your oven to 400 degrees.
  2. Gently wash the portobello mushrooms, remove the stems and gills with a spoon, and place them on a lightly greased oven pan (we prefer using extra virgin olive oil spray).
  3. Dice the red onion and red bell pepper. Also cut the cherry tomatoes into quarters and set aside.
  4. Put the extra virgin olive oil in a medium-sized pan over medium heat.
  5. Cook the red bell peppers, red onion, and sausage in the pan for 10 minutes. Make sure that you break up the sausage well into smaller chunks during the cooking process. If there is a casing on the sausage, remove it beforehand.
  6. Add the Journey Spice Co. Organic Tuscan Seasoning, cherry tomatoes, and cheese, and stir well.
  7. Evenly distribute the mixture in the portobello mushrooms.
  8. Bake in your oven for 20 minutes, and enjoy!
