Roasted Pumpkin Seeds Recipe
This Roasted Pumpkin Seed Recipe gives you an incredibly tasty idea for using those pumpkin seeds after carving jack-o-lanterns for Halloween or any other time you have some on hand. We used Journey Spice Co. Organic Moroccan Spice Rub for this recipe, but we have also used several of our other seasoning blends in the past on pumpkin seeds, and it turned out great!
Prep Time: 10 minutes
Cook Time: 20-30 minutes
Ingredients:
1 Tbsp. Journey Spice Co. Organic Moroccan Spice Rub (less or more depending on taste and amount of pumpkin seeds)
1-2 cups of pumpkin seeds (or the yield of one medium-sized pumpkin)
1/2 Tbsp. extra virgin olive oil (adjust according to the amount of pumpkin seeds you have)
A pinch of salt if desired
Directions:
- Preheat your oven to 325 degrees.
- After scooping the pumpkin seeds out of the pumpkin and cleaning them, place the pumpkin seeds on paper towels and dry them as much as possible for about an hour.
- Place the pumpkin seeds on a large oven sheet and pour on the olive oil, Journey Spice Co. Organic Moroccan Spice Rub, and salt if using.
- Mix everything together well and spread the pumpkin seeds as thinly as possible in order to not have too many overlapping.
- Bake for 20-30 minutes, turning the pumpkin seeds with a spoon halfway through to ensure an even cooking. The cooking time depends on how dry the pumpkin seeds were before being placed in the oven.
- Store in an airtight container for up to four days.
