Mushroom Tomato Phyllo Shell Appetizers
These Mushroom Tomato Phyllo Shell Appetizers are flavorful and have a relatively fancy flare to them. Besides the time they take to marinate, they are also easy and fairly quick to make. These appetizers are similar to bruschetta, but they cannot quite be called bruschetta since phyllo shells are used instead of toasted bread.
Prep Time: About 15 minutes
Cook/Bake Time: 10 minutes + marinating time
Ingredients:
2 ½ Tbsp. Journey Spice Co. Organic Pizza Seasoning
15 phyllo shells (purchase the pre-made or make your own)
1 ½ cups cremini/baby bella mushrooms, washed, de-stemmed, and cubed
½ cup diced Campari tomatoes (or other tomatoes of choice)
½ cup mozzarella pearls
2 tsp balsamic vinaigrette
2 minced garlic cloves
2 tsp extra virgin olive oil
½ tsp coarse black pepper
Directions:
- Pour the extra virgin olive oil in a medium-sized pan and sauté the mushrooms and minced garlic cloves over medium heat for two minutes. Drain excess liquid.
- Set the balsamic vinaigrette and 1 ½ Tbsp. Journey Spice Co. Organic Pizza Seasoning aside and add the rest of the ingredients to the pan. Sauté for another two minutes.
- Add the sautéed ingredients to a medium-sized bowl, and add the balsamic vinaigrette and the rest of the Journey Spice Co. Organic Pizza Seasoning. Stir all ingredients together well.
- Cover the bowl with ingredients and let it marinate in your refrigerator for at least three hours, preferably overnight.
- After letting the ingredients marinate, set your oven to 350 degrees.
- Place the phyllo shells on a baking sheet and bake for about five minutes or until the cups have browned slightly and are crunchy. Keep a close eye on the phyllo shells, as they can burn quickly!
- Add about one teaspoon of ingredients to each shell and evenly disperse the ingredients.
- Try to enjoy within a few hours of adding the ingredients to the shells because they will get soggy after several hours.
