Moroccan Breakfast Sandwich

This Moroccan Breakfast Sandwich is perfect for any day of the week because it is so fast and easy to make. It includes just six ingredients, including Journey Spice Co. Organic Moroccan Spice Rub, yet it is so flavorful.

Ingredients:

1/2 Tbsp. Journey Spice Co. Organic Moroccan Spice Rub

1 English muffin

2 large eggs

Handful of baby spinach

1 1/2 Tbsp. reduced-fat cream cheese

4 cherry tomatoes, diced

Cooking spray (we prefer extra virgin olive oil spray)

If you want a vegan option, substitute the eggs for tofu and use plant-based cream cheese.

Directions:

  1. Crack the eggs into a small bowl.
  2. Add the diced tomatoes and the Journey Spice Co. Organic Moroccan Spice Rub, and stir the ingredients until well-mixed.
  3. Lightly spray a medium-sized cooking pan with cooking spray and heat over medium heat for about 30 seconds.
  4. Add the mixed egg ingredients, cover with a lid, and cook for 4-5 minutes.
  5. While the eggs are cooking, slice and toast the English muffin. Spread the cream cheese on the bottom half of the toasted English muffin.
  6. Fold the cooked egg in half and then in half again with a spatula.
  7. Place the cooked egg on the English muffin, add the spinach, and place the other half on top.
