Mediterranean Spinach Wraps

These Mediterranean Spinach Wraps make a quick and easy lunch or dinner. They incorporate so many healthy ingredients like spinach, avocado, sprouts, cremini mushrooms, and chickpeas to add some protein. Want to add more protein? These wraps are extremely customizable, and you can sauté chicken instead of the chickpeas, but just make sure to increase the cooking time if you are doing this. You can also add feta cheese if you are a feta fan.

Prep Time: about 15 minutes

Cook/Bake Time: 12 minutes

Ingredients:

2 Tbsp. Journey Spice Co. Organic Mediterranean Herb Blend

15.5 oz. can of chickpeas

6 whole wheat tortillas (can substitute gluten-free or other types of tortillas)

2 ½ cups of sliced cremini/baby bella mushrooms

2 cups of baby spinach, packed

1 cup of sprouts

1 large avocado

2 garlic cloves, minced

1 Tbsp. extra virgin olive oil

Directions:

  1. In a medium frying pan, add the extra virgin olive oil.
  2. Drain and rinse the chickpeas and put them in the frying pan.
  3. Add the mushrooms and garlic cloves and sauté over medium heat for 10 minutes.
  4. Add the Journey Spice Co. Organic Mediterranean Herb Blend and sauté for another two minutes.
  5. Making sure to evenly disperse ingredients among the six tortillas, add spinach, sprouts, sliced avocado, and chickpea mushroom mixture and roll the wrap up. Repeat until all six wraps are completed.
  6. These wraps are best to eat chilled, and it is not recommended that you heat leftovers due to the fresh veggies.
  7. Additions and substitutions: Cubed or shredded chicken works great instead of the chickpeas – just keep in mind that chicken takes longer to cook. Feta cheese is also an excellent addition. Add salt if desired.
