Mediterranean Chickpea Salad
This Mediterranean Chickpea Salad is so fast and easy to throw together after a busy day when the last thing you want to do is cook! It also gives you an incredibly healthy dinner option with baby spinach, cucumbers, cherry tomatoes, fiber, and lean protein from chickpeas. This salad is, of course, vegan/vegetarian, but it would also taste delicious if you substitute the chickpeas for chicken.

Cook/Bake Time: 5 minutes
Ingredients:
1 Tbsp. Journey Spice Co. Organic Moroccan Spice Rub (more or less if you prefer)
1 Tbsp. Journey Spice Co. Organic Za’atar (more or less if you prefer)
15 oz. can of chickpeas
2 handfuls of baby spinach
1 cup cherry tomatoes, sliced in half
Half of a cucumber, sliced
6 Tbsp. hummus, any kind, more or less to suit preference
1/2 Tbsp. extra virgin olive oil
Directions:
- Add a handful of baby spinach to two small salad bowls.
- Pour the extra virgin olive oil into a medium skillet and turn your stove to medium heat.
- Add the chickpeas and Journey Spice Co. Organic Moroccan Spice Rub and cook for five minutes, stirring occasionally.
- Evenly add the chickpeas to both salads.
- Evenly add the cucumbers and baby tomatoes to both bowls. Add dollops of hummus to both bowls.
- Sprinkle with the Journey Spice Co. Organic Za’atar, and enjoy!
