Meal Prep Egg Bites

These Meal Prep Egg Bites make an excellent, protein-packed, and delicious make-ahead breakfast that you can conveniently reheat in the microwave and enjoy throughout the week. You can even double up on this recipe and freeze them to reheat whenever you want. These egg bites feature Journey Spice Co.’s Organic Pizza Seasoning, mozzarella cheese, cremini mushrooms, cherry tomatoes, and spinach, giving it an absolutely delicious Italian taste profile.

Cook Time: 27 minutes

Ingredients:

2 Tbsp. Journey Spice Co. Organic Pizza Seasoning (more or less if preferred)

6 large eggs

1 cup cremini (baby bella) mushrooms, chopped

1 cup baby spinach, tight-packed, finely sliced

3/4 cup shredded mozzarella or other Italian cheese

1/2 cup cherry tomatoes, chopped

1 Tbsp extra virgin olive oil

non-stick cooking spray

Directions:

  1. Preheat your oven to 375 degrees.
  2. Crack the eggs in a small bowl and mix them until well mixed. Set aside.
  3. Heat the extra virgin olive oil in a medium-sized pan on your stove over low heat. Add the mushrooms, spinach, tomatoes, and 1 Tbsp. of the Journey Spice Co. Organic Pizza Seasoning and sauté for about two minutes. Remove from heat after sautéing.
  4. Lightly spray the bottoms of a 12-cup muffin tin with non-stick cooking spray. Evenly disperse the ingredients from the pan in the bottom of the cups.
  5. Evenly disperse the egg mixture over the other ingredients in each cup. Evenly disperse the shredded cheese in each cup. Evenly disperse the other Tbsp. of Journey Spice Co. Organic Pizza Seasoning on the top of each cup.
  6. Bake the egg bites in your preheated oven for 25 minutes.
  7. These egg bites will remain fresh in your refrigerator for about 4-5 days in a covered container and even longer if you freeze them.
