Italian Zucchini Bacon Triangles
These Italian Zucchini Bacon Triangles make a delicious appetizer for holiday gatherings like Thanksgiving or when you are craving a crunchy and tasty snack. One of the good things about this recipe is that it uses phyllo dough, which contains significantly less fat and saturated fat than other store-bought dough like puff pastry dough. Like many recipes, it can easily be made plant-based or vegan-friendly by substituting plant-based ingredients.

Ingredients:
2 Tbsp. Journey Spice Co. Organic Pizza Seasoning
8 oz. of phyllo dough
2 ½ cups zucchini, shredded
2 ½ cups shredded parmesan cheese or mozzarella cheese or a combination of both (dairy or plant-based/vegan-friendly varieties both work great in this recipe).
1 ½ cups bacon, sliced into small squares (regular or a plant-based variety like seitan bacon can be used).
Extra virgin olive oil cooking spray
Directions:
- Follow the instructions on your phyllo dough package. You will probably need to thaw the dough at room temperature for a few hours before getting started.
- Preheat your oven to 375 degrees.
- Spray two large baking sheets with extra virgin olive oil spray.
- Mix Journey Spice Co. Organic Pizza Seasoning, cheese, bacon, and zucchini in a large bowl.
- Carefully spread one sheet of phyllo dough onto a large work surface.
- Lightly spray the entire surface of the phyllo dough with extra virgin olive oil spray.
- Place a second piece of the phyllo dough on top of the first piece and gently press it together with the first piece.
- Gently cut the pieces of phyllo dough into four even pieces.
- Place about a tablespoon of the mixture at the bottom of a phyllo slice and fold the piece of dough in the shape of a triangle, similar to how a flag is folded.
- Once the piece is completed, fold and lightly spray with more extra virgin olive oil spray. Place the piece onto one of the oven sheets.
- Repeat until all of the dough is used.
- Bake the triangles in your oven for about 20. Since Ovens vary, check to ensure they are not burning at the 15-minute mark.
