Italian Sausage Sheet Pan Dinner

This Italian Sausage Sheet Pan Dinner hits the spot after a long day. It is so easy to make, and it is also reasonably healthy. It features three of our organic Italian seasonings, and you can easily make it vegan-friendly if you use plant-based sausage instead of regular Italian sausage.

Cook Time: 20-25 minutes

Ingredients:

1-2 Tbsp. Journey Spice Co. Organic Tuscan Seasoning (season according to taste)

1-2 Tbsp. Journey Spice Co. Organic Sicilian Seasoning

1-2 Tbsp. Journey Spice Co. Organic Savory Garlic Herb

1 lb. of Italian sausage, sliced

1 lb. baby potatoes, quartered

2 bunches of asparagus, trimmed

1 red bell pepper, diced

8 oz. cremini mushrooms (baby bella), sliced

1/4 cup pine nuts

1 Tbsp. extra virgin olive oil

Make it vegan: Use any variety of plant-based sausage products instead.

Optional: Sprinkle with parmesan cheese. Use a pinch of salt if desired.

Directions:

  1. Preheat your oven to 425 degrees.
  2. Lay out the sliced Italian sausage on one side of a large sheet pan. Sprinkle with Journey Spice Co. Organic Tuscan Seasoning.
  3. Combine the asparagus, mushrooms, pine nuts, bell peppers, Journey Spice Co. Organic Sicilian Seasoning, and 1/2 Tbsp. extra virgin olive oil in a large bowl. Gently mix these ingredients together and lay them out on the pan next to the sausage.
  4. Rinse the bowl and pour the potatoes, Journey Spice Co. Organic Savory Garlic Herb, and 1/2 Tbsp. extra virgin olive oil. Mix these ingredients and lay them on the rest of the sheet pan.
  5. Bake in your oven for 20-25 minutes, until the potatoes are soft and the sausage is fully cooked.
