Italian Meatball Soup

This Italian Meatball Soup is perfect for the cold months! Sure, you may be used to eating meatballs and spaghetti, but this meatball soup is also an exciting way to enjoy meatballs. You can use ground beef, turkey, chicken, and even vegan/plant-based ground “meat” varieties for the meatballs. This recipe also uses ditalini pasta, often used in Italian soup recipes.

Ingredients:

2 Tbsp. Journey Spice Co. Organic Pizza Seasoning

1 ½ Tbsp. Journey Spice Co. Organic Tuscan Seasoning

1 Tbsp. Journey Spice Co. Organic Savory Garlic Herb

1 lb. ground meat (ground turkey, chicken, beef, or plant-based will all work in this recipe).

5 cups Roma tomatoes, quartered and sliced

6 cups vegetable broth (use low-sodium if preferred)

4 cups zucchini, quartered and chopped

2 cups milk (any type, including plant-based)

2 cups uncooked ditalini pasta

2 cups carrots, chopped

1 cup celery, chopped

¼ cup breadcrumbs

Medium red onion, chopped

4 garlic cloves, minced

1 Tbsp. extra virgin olive oil

Directions:

  1. Combine the Journey Spice Co. Organic Tuscan Seasoning, ground meat, breadcrumbs, and 1 minced garlic clove in a medium-sized bowl.
  2. Use your hands to make sure the meatball ingredients are mixed well. Make 35-40 small meatballs that are about a tablespoon in size each. Set the meatballs aside.
  3. In a large soup pot, pour the extra virgin olive oil and turn the stove on medium heat. Add the chopped onion, carrots, celery, and 3 garlic cloves. Sauté for 10 minutes.
  4. Add the zucchini and tomatoes and sauté for another 5 minutes.
  5. Add the vegetable broth, meatballs (carefully), and Journey Spice Co. Organic Pizza Seasoning and Organic Savory Garlic Herb Seasoning and simmer for 20 minutes covered.
  6. Stir in the ditalini pasta and milk and simmer covered for another 10 minutes.
  7. Optional: Top with parmesan cheese and add salt if desired.
