High Protein Black Bean Burger

Are you looking for a High Protein Black Bean Burger that doesn’t taste like cardboard? Maybe we’re biased since we love our seasonings, but we think this recipe does the trick. So many people believe you can’t get enough protein if you’re on a plant-based or vegan diet. These black bean burgers seem to prove otherwise because they pack a lot of protein that is on par with a typical beef burger. Also, unlike many plant-based options you can buy at the store, this recipe uses ingredients that are more on the natural side, like black beans (of course!), quinoa, mushrooms, tomato paste, vital wheat gluten, coconut aminos, and your favorite Journey Spice Co. Seasonings.

Prep Time: 20-25 minutes

Bake Time: 30-35 minutes

Ingredients:

3-4 Tbsp. Journey Spice Co. Organic Seasoning*

1 15 oz. can of black beans

2 cups diced mushrooms (any kind)

2 cups vital wheat gluten

1/2 cup uncooked quinoa

6 Tbsp. tomato paste

2 Tbsp. coconut aminos

Non-Stick cooking spray

* We tried this recipe with Organic Heartland Rub, Organic KC Bar-B-Que Seasoning, and Organic Moroccan Spice Rub, but several of our other seasonings would probably work great, too.

Topping Ideas: Any kind of cheese, including plant-based varieties. Veggies or fruit like sliced tomatoes, lettuce, spinach, caramelized onions, sliced avocado, sliced pineapple, and beyond. Consider matching toppings to the type of cuisine. For example, if you are using Organic Moroccan Spice Rub, consider toppings that match Mediterranean cuisine like hummus, Jben, halloumi, feta, muhammara, and sliced tomatoes.

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pour the can of black beans with the juice in a medium-large bowl. Mash the black bean with a potato masher or fork for about 30 seconds. The goal is for the resulting mixture to be lumpy with some beans that are not completely mashed up.
  3. Cook the quinoa as directed on the packaging and set aside.
  4. Add the cooked quinoa, mushrooms, vital wheat gluten, coconut aminos, tomato paste, and Journey Spice Co. Organic Seasoning of your choice to the bowl with the black beans.
  5. Knead the mixture with your hands until well-blended and form the mixture into 10-12 individual patties.
  6. Spray an oven-safe pan with cooking spray and place the patties on the pan.
  7. Bake for 30-35 minutes (longer for larger patties).
  8. Store leftovers in an airtight container in your refrigerator and enjoy within four days.
