Greek Spinach Feta Wrap

This delicious Greek Spinach Feta Wrap is quick and easy to make. It is also so convenient to grab and go during busy mornings. The cherry on top? It is also healthy! You can easily make it vegan-friendly, too, by substituting the egg whites for tofu and plant-based cheeses.

Ingredients:

1 1/2 Tbsp. Journey Spice Co. Organic Mediterranean Herb Blend

2 large wheat tortillas or another tortilla of choice

3 cups baby spinach, densely packed

3/4 cup egg whites

1/2 cup diced cherry tomatoes

1/2 cup feta cheese

1/4 cup reduced-calorie cream cheese

1 tsp extra virgin olive oil

Directions:

  1. Add the extra virgin olive oil to a medium frying pan and sauté the spinach, tomatoes, and 1 Tbsp of Journey Spice Co. Organic Mediterranean Herb Blend for about 2 minutes.
  2. In a bowl, add the mixture from the frying pan. Add the cream cheese and feta, and stir all ingredients together well.
  3. Spray the frying pan with non-stick cooking spray (we prefer extra virgin olive oil spray). Add the egg whites and sprinkle with 1/2 Tbsp. Journey Spice Co. Organic Mediterranean Herb Blend. Cover and let cook over medium heat for about 2 minutes.
  4. Evenly spread the spinach, cream cheese, and feta mixture in the middle of the two tortillas while the egg is cooking.
  5. Split the cooked egg in half and add it to the two tortillas.
  6. Fold the tortillas like a burrito, spray the frying pan with non-stick cooking spray, and lightly heat both sides of the wrap for about 1 minute to make them crispy.
