Greek Potato Skins
These Greek Potato Skins are so delicious to make any time! Don’t be fooled by the cook/bake time of this recipe; it is actually very easy to make since the majority of the time goes towards baking the potatoes in the oven. The scooped-out potato is excellent to save and use for a meal, especially is you sprinkle it with some Journey Spice Co. Organic Mediterranean Herb Blend or Organic Savory Garlic Herb.

Cook/Bake Time: 1 hour and 20 minutes
Ingredients:
1 1/2 Tbsp. Journey Spice Co. Organic Mediterranean Herb Blend (more or less depending on preference).
10 russet potatoes
1 medium onion, red or white
8 oz. of crimini mushrooms
8 oz. feta cheese
1/4 cup pistachios or walnuts
1 Tbsp. extra virgin olive oil
Optional: Pinch of salt on each potato
Directions:
- Preheat your oven to 425 degrees Fahrenheit.
- Wash the potatoes and then rub a light coating (about 1/2 Tbsp. extra virgin olive oil) of the extra virgin olive oil on each one.
- Place each potato on an oven-safe baking sheet, poke each potato a few times with a fork, and bake for 50 minutes.
- Meanwhile, halve the onion and slice it into thin, uniform slices.
- Add 1/2 Tbsp. of extra virgin olive oil to a medium-sized pan and turn your stove on medium heat. Sauté the onions for 10 minutes.
- Wash and dice the mushrooms. Add the mushrooms to the pan and sauté for 5 minutes.
- Slice the potatoes in half. Scoop the potato out of each, leaving about 1/4 of the potato in each shell. The scooped-out potato is excellent to save for a meal during the week, especially if you sprinkle some of Journey Spice Co.’s Organic Mediterranean Herb Blend or Organic Savory Garlic Herb on it.
- Evenly disperse the feta cheese in each potato halve.
- Evenly disperse the onion and mushroom mixture in each potato halve.
- Evenly disperse the Journey Spice Co. Organic Mediterranean Herb Blend on each halve.
- Crush the pistachios or walnuts by rolling a rolling pin over them and then evenly sprinkle the crushed nuts over each potato halve.
- Place the potato halves in the oven again for 15 minutes.
- Let it cool for a few minutes, and enjoy!
