Greek Potato Skins

These Greek Potato Skins are so delicious to make any time! Don’t be fooled by the cook/bake time of this recipe; it is actually very easy to make since the majority of the time goes towards baking the potatoes in the oven. The scooped-out potato is excellent to save and use for a meal, especially is you sprinkle it with some Journey Spice Co. Organic Mediterranean Herb Blend or Organic Savory Garlic Herb.

Prep Time: 20 minutes

Cook/Bake Time: 1 hour and 20 minutes

Ingredients:

1 1/2 Tbsp. Journey Spice Co. Organic Mediterranean Herb Blend (more or less depending on preference).

10 russet potatoes

1 medium onion, red or white

8 oz. of crimini mushrooms

8 oz. feta cheese

1/4 cup pistachios or walnuts

1 Tbsp. extra virgin olive oil

Optional: Pinch of salt on each potato

Directions:

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Wash the potatoes and then rub a light coating (about 1/2 Tbsp. extra virgin olive oil) of the extra virgin olive oil on each one.
  3. Place each potato on an oven-safe baking sheet, poke each potato a few times with a fork, and bake for 50 minutes.
  4. Meanwhile, halve the onion and slice it into thin, uniform slices.
  5. Add 1/2 Tbsp. of extra virgin olive oil to a medium-sized pan and turn your stove on medium heat. Sauté the onions for 10 minutes.
  6. Wash and dice the mushrooms. Add the mushrooms to the pan and sauté for 5 minutes.
  7. Slice the potatoes in half. Scoop the potato out of each, leaving about 1/4 of the potato in each shell. The scooped-out potato is excellent to save for a meal during the week, especially if you sprinkle some of Journey Spice Co.’s Organic Mediterranean Herb Blend or Organic Savory Garlic Herb on it.
  8. Evenly disperse the feta cheese in each potato halve.
  9. Evenly disperse the onion and mushroom mixture in each potato halve.
  10. Evenly disperse the Journey Spice Co. Organic Mediterranean Herb Blend on each halve.
  11. Crush the pistachios or walnuts by rolling a rolling pin over them and then evenly sprinkle the crushed nuts over each potato halve.
  12. Place the potato halves in the oven again for 15 minutes.
  13. Let it cool for a few minutes, and enjoy!
