
Greek Omelet
This Greek Omelet features Journey Spice Co.’s Organic Mediterranean Herb Blend. It seems so elegant, yet you can make it in under 20 minutes.

Ingredients:
1/2 Tbsp. (or preference) Journey Spice Co. Organic Mediterranean Herb Blend
3 eggs (or equivalent egg substitute)
1 quarter of a small red onion, sliced
1/2 cup cherry tomatoes, sliced in half
1/2 cup spinach
1/2 cup feta crumbles
1 Tbsp. Kalamata olives, sliced
1/2 Tbsp. extra virgin olive oil
* Use eggs whites if you want to reduce fat and calories.
Directions:
- In a large non-stick frying pan, add extra virgin olive oil and turn the heat on your stove to medium.
- Sauté the red onion for two minutes.
- Add the tomatoes and spinach, and sauté until the spinach is wilted.
- Whisk the eggs in a bowl until blended, then pour over the vegetables in the fry pan. Gently maneuver the pan so that the eggs fill the whole pan.
- Add the feta cheese and olives. Cover the pan with a lid for about 2-3 minutes, until the eggs are cooked.
