Crispy Spinach Stuffed Cremini Mushrooms

These delectable Crispy Spinach Stuffed Cremini Mushrooms make the perfect snack or appetizer before serving a delicious meal like lasagna and many other main courses.

Ingredients:

1 ½ Tbsp. Journey Spice Co. Organic Savory Garlic Herb

18 cremini mushrooms

2 cups baby spinach (pack well to measure)

½ cup shredded mozzarella or plant-based cheese

¼ cup bread crumbs

1 Tbsp. minced garlic

½ Tbsp. extra virgin olive oil

Optional: A few pinches of salt, parmesan sprinkled on top if you like it extra cheesy.

Directions:

  1. Preheat your oven to 400 degrees.
  2. Gently wash the cremini mushrooms, remove the stems, and place them on a lightly greased oven pan (we prefer using extra virgin olive oil spray).
  3. Add the extra virgin olive oil in a medium pan. Sauté the baby spinach with the minced garlic for about two minutes over medium heat.
  4. Transfer the cooked spinach to a medium-sized bowl. Add the Journey Spice Co. Organic Savory Garlic Herb, cheese, and bread crumbs and stir well.
  5. Evenly distribute the mixture in the cremini mushrooms.
  6. Bake in your oven for 20 minutes, and enjoy!
