
Chicken Spinach Artichoke Panini
These Chicken Spinach Artichoke Paninis have quickly become the new “it” sandwich of the moment for us. There is so much flavor going on that these paninis will likely become your new favorite sandwich, too! We will also let you in on a little secret – we used all plant-based ingredients (yep, they make plant-based “chicken” strips). However, these sandwiches are delicious whether you’re using regular chicken and cheese or going all plant based.

Cook Time: 25 minutes
Ingredients:
1 1/2 Tbsp. Journey Spice Co. Organic Tuscan Seasoning
4 slices of flatbread
1 chicken breast, thawed and sliced into strips
4 slices of provolone
3 Tbsp. cream cheese
2 artichoke hearts, chopped
1/4 cup baby spinach, sliced
1 garlic clove
1 tsp. extra virgin olive oil
Juice from half a lemon
Pinch of salt
Directions:
- Preheat your oven to 400 degrees Fahrenheit.
- Mix together 1 Tbsp. Journey Spice Co. Organic Tuscan Seasoning, chicken, extra virgin olive oil, lemon juice, and a pinch of salt in a small bowl and set aside for 10 minutes.
- Microwave cream cheese in a small bowl until softened. Mix it with the artichoke, garlic clove, 1/2 Tbsp. Journey Spice Co. Organic Tuscan Seasoning, and spinach.
- Bake the chicken for 20 minutes in your oven.
- Spread the artichoke-spinach mixture evenly over two of the flatbread halves.
- Add 1 slice of provolone to the mixture, then add the chicken.
- Add another slice of provolone over the chicken, and then add the other slice of flatbread.
- Grill the sandwich for 3-5 minutes on a panini grill or in a frying pan (be sure to grill both sides for 2-3 minutes if stovetop grilling).
