
Chicken Brie Baguette Sandwich
This Chicken Brie Baguette Sandwich seems like something you could eat at a fancy French cafe, and yet, you can easily make it at home in under 25 minutes!

Cook Time: 10-15 minutes
Ingredients:
2 1/2 tsp. Journey Spice Co. Organic Herbes de Provence
2 baguettes, sliced lengthwise
10 oz. chicken breast strips
4 oz. brie cheese, thinly sliced
1 medium-sized tomato, sliced
2 small handfuls of arugula
4 tsp. Dijon mustard
1/2 tsp. extra virgin olive oil
1/2 tsp. ground black pepper
1/2 tsp. granulated garlic
* Can substitute brie with Swiss, provolone, and other cheeses. Make it plant-based by substituting the chicken with tofu or other plant-based products and plant-based cheese.
Directions:
- Preheat your oven to the broil setting.
- Add the extra virgin olive oil to a frying pan over medium heat. Pan fry the chicken for 6-10 minutes (10-15 minutes if frozen). Add 1 1/2 tsp. Journey Spice Co. Organic Herbes de Provence, pepper, and garlic during the last 30 seconds.
- Spread 2 tsp. of Dijon mustard on the bottom half of each baguette. Evenly add the cooked chicken over the Dijon mustard. Evenly add the brie cheese over the chicken.
- Place the open baguettes on an oven sheet. Broil for 2-3 minutes until toasted – keep a close eye on it so they don’t burn.
- Evenly add the sliced tomatoes and arugula. Sprinkle 1 tsp. of Journey Spice Co. Organic Herbes de Provence over both open sandwiches. Close the baguettes and cut them in half to make four sandwiches.
