
Sicilian Lemon Chicken Zoodles
This Sicilian Lemon Chicken Zoodle recipe is super easy to throw together in one pan in around 20 minutes. It is also a delicious way to eat your veggies and can be made vegan-friendly with plant-based ingredients. If you are trying to reduce carbs, zucchini noodles or “zoodles” are an excellent option instead of traditional pasta. The zucchini noodles are created with a vegetable spiralizer. Still, if you do not own one, that is alright because you can often find spiralized vegetables in many grocery stores’ fruit and vegetable sections.
Prep Time: 5-10 minutes (depends on if you are spiralizing the noodles yourself)
Cook Time: 12-15 minutes
Ingredients:
2 1/2 Tbsp. Journey Spice Co. Organic Sicilian Seasoning
4 small to medium-sized zucchinis and/or squash, or about 4 cups of store-bought pre-spiralized zucchini and/or squash
1 lb. chicken, cut into bite-sized pieces
Juice from 1 1/2 lemons
1/4 cup shredded parmesan
4 Tbsp. extra virgin olive oil + 1 tsp. for pan-frying
1 minced garlic clove
Customize salt as desired.
Directions:
- Pour 1 tsp. of extra virgin olive oil in a large pan and pan-fry the chicken pieces on medium heat for 10 minutes.
- Spiralize the zucchini and/or squash if you did not purchase pre-spiralized zucchini and/or squash.
- Mix the extra virgin olive oil, Journey Spice Co. Organic Sicilian Seasoning, lemon juice, parmesan, and minced garlic in a small bowl.
- Add the zoodles and the mixture to the pan.
- Sauté everything for 2 minutes and serve immediately.
