Greek Orzo and Chickpeas
This Greek Orzo and Chickpeas recipe is so savory and comforting, especially during the winter months. One of the best parts of this recipe, beyond how delicious it is, is that it is relatively quick and easy to make and only requires one pan (yeah, to less clean-up!). This Greek Orzo and Chickpeas recipe is also vegetarian and vegan, but you can easily add cooked chicken if you want (our Organic Mediterranean Herb Blend is delicious with chicken, too).

Ingredients:
2 Tbsp. (or preference) Journey Spice Co. Organic Mediterranean Herb Blend
15.5 oz can of chickpeas
4 cups vegetable broth
3 cups baby spinach
2 cups cherry tomatoes, sliced in half
1 1/2 cups uncooked orzo pasta
1 red bell pepper, sliced
1 medium red onion, diced
1/2 cup kalamata olives, sliced
2 Tbsp. extra virgin olive oil
3 garlic cloves, minced
Juice from one large lemon
Optional: Crumbled feta on top
Directions:
- Heat a large frying pan over medium heat, and then add the olive oil.
- Sauté the onions for 3 minutes.
- Add the garlic and sauté for another minute.
- Add the vegetable broth, bell pepper, and orzo pasta.
- As soon as it boils, reduce the heat and simmer for 10 minutes.
- Add the chickpeas, Journey Spice Co. Mediterranean Herb Blend, and lemon juice.
- Stir in spinach, olives, and tomatoes, and sauté for 2 minutes until the spinach is wilted.
